6 to 7 hours warm smoke with water pan.
1 x small leg of pork, rubbed with salt
2kg pork rashers, no treatments.
4 hours medium to hot smoke, no water pan (to get the crackle going.)
Cold chicken, cold fish, hot pork, veggies.
