Smoked Spicy Salt Chicken

2 tablespoons salt
2 tablespoons peppercorns
1 teaspoon cumin
1 teaspoon paprika

Pound in a mortar until everything is a fine powder. Add parsley flakes and any other herb that you fancy. Coat outside of chicken until stuff stops sticking. Microwave a small lemon until it's hot, poke full of holes and shove it into the chicken. Smoke on the top rack at 190F, but watch the wood doesn't catch fire. I did this by opening the vents for short periods until the temp started to rise, then shut them off. Make sure the water pan doesn't dry out.

Smoked Marinaded Chicken.

Buy a bagged marinaded chicken from Woolworths. Smoke with the other chicken.

Smoked Pork Sausages

Get pork sausages in the smoke on the rack below the chickens.

Very smokey dinner last night. And smoked meat sandwiches for lunch this week.
